It happens to all of us. Some days, the lunch you had hours earlier is not cutting it. You need good snacks and you need them fast! It’s always a good idea to keep a list of quick “last minute” easy snack ideas on hand so you can stay focused on more important details.

Before you go for that bag of chips you’ll feel terrible about later, try some of these easy “feel-good” snack ideas using Jeff’s Naturals.  These simple combinations can be put together in just minutes and will satisfy that hunger until dinner time.

 

1. Create a quick antipasto platter using Garlic Stuffed Olives, Marinated Artichoke Hearts and Roasted Red Bell Peppers along with your favorite sliced deli meats and/or cheese.

Greek 7-Layer Dip with Peperoncini

Wholesome and Delicious Greek 7-Layer Dip

Tired of the same old heavy layered dip and chips? Bring something new to the table!

The chefs in the Jeff’s Naturals kitchen have created an irresistible seven-layer dip with a Mediterranean twist the whole crowd will love! This “feel-good” appetizer contains wholesome ingredients like our non-GMO, minimally processed line of olives and peppers.

With simple ingredients like creamy hummus, Organic Sliced Greek Kalamata Olives, feta cheese and the zesty zing of Sliced Golden Greek Peperoncini – this dish is guaranteed to be a hit at your next party. This dip can be made ahead and stored covered in the refrigerator for several hours. Add parsley and olive oil right before serving.

Total Time: 15 min.
Serves: 4-6

INGREDIENTS
2 cups organic hummus
1 cup organic Greek yogurt
2 green onions, sliced thin
½ cup, Jeff’s Naturals Organic Sliced Greek Kalamata Olives, drained and chopped
½ cup, Jeff’s Naturals Roasted Bell Pepper Strips, drained and chopped
¼ cup organic crumbled feta cheese (2oz.)
1/3 cup Jeff’s Naturals Sliced Golden Greek Peperoncini drained,
2 tablespoons chopped Italian parsley
Extra-Virgin Olive Oil to drizzle on top

PREPARATION
Spread the hummus evenly in a glass 8×8 pan or serving dish.

Next, layer the ingredients in the following order: yogurt, green onions, Kalamata olives, red peppers, feta, peperoncini, and chopped parsley.

Drizzle with olive oil and serve with sliced bread, pita chips, or cut veggies.

Start with Leafy Greens to build your base.

Look for dark leafy greens packed with important nutrients like folic acid – think baby spinach, kale, arugula or a spring mix that includes a variety of dark greens.

Back in November, we asked our fans to submit their favorite recipe & photo using Jeff’s Naturals products for a chance to win some cash and some Jeff’s Naturals goodies. Lucky for us, Emily from One Lovely Life  shared her delicious and super simple Black Bean & Chipotle Stuffed Potato recipe and photo. “One of my favorites,” she writes. “Such an inexpensive and easy meatless dinner. Use your favorite taco toppings to build an amaaaaazing potato.”

Black Bean & Chipotle Stuffed Potato

Note: There are no measurements to track, all you have to do is stuff your potato according to your individual tastes.

Jeff's Naturals Stuffed Sweet Potato

 

Ingredients:
Sweet potatoes (however many you’d like to bake)
Olive oil
Kosher salt
Black beans
Avocado
Jeff’s Naturals Roasted Bell Pepper Strips
Chipotle Ranch Dressing
Baby tomatoes (optional)
Jeff’s Naturals Sliced Tamed™ Jalapeños (optional)

Directions:
Preheat the oven to 375 degrees.

Wash all potatoes and stab with a fork or a knife several times each (6-8 times at least).

Rub each potato with a thin layer of olive oil and sprinkle with kosher salt and place on baking sheet to prevent spills. You can place them directly on the rack if you like.

Bake 45-60 minutes, or until you can pierce them easily with a knife.

Make a slit lengthwise end-to-end across the top and fluff the inside with a fork. Stuff with toppings: black beans, avocado, peppers, Chipotle Ranch Dressing and (optional) tomatoes & Jalapeños.

Fresh From Jeff’s Kitchen: Mexican Street Corn Dip

In honor of Cinco de Mayo this week, we wanted to introduce a new Southwest/Mexican inspired recipe that is simple to make and darn delicious!

The recipe calls for our delicious Diced Tamed™ Jalapeño Peppers so you can enjoy the pepper flavor with less intense heat. However, feel free to crank up the heat by adding or subbing out 1/2 cup of our Sliced Hot Cherry Peppers, roughly chopped. Or, you can get creative and add about 1/2 cup of chopped Sunshine Mix Mild Banana Pepper Rings or Roasted Bell Pepper Strips!

Serve warm with chips along with a fresh margarita and your guests will be chanting “mas mas mas!”

Delicious & Hot Mexican Street Corn Dip In honor of Cinco de Mayo this week, we wanted to introduce a new Southwest/Mexican inspired recipe that is simple to make and darn delicious!  Serve warm with chips along with a fresh margarita and your guests will be chanting “mas mas mas!”

Mexican Street Corn Dip

Prep Time: 8 minutes
Total Time: 30 minutes
Serves: 10

INGREDIENTS
6 ears of corn on the cob, husked and cleaned
1 poblano pepper, cut in half and deseeded
½ red onion
½ cup mayonnaise
½ cup crumbled Cotija cheese, plus some for topping
½ cup Jeff’s Naturals Diced Tamed™ Jalapeño Peppers, drained. You can substitute with our Sliced Tamed™ Jalapeños, roughly chopped.
1 lime, juiced
½ teaspoon chipotle chili powder, plus some for topping

PREPARATION
Preheat grill on high heat.

Grill corn for about 15-20 minutes on the hot grill turning frequently until nice and charred and corn is cooked. Grill poblano pepper and red onion for about 10 minutes, turning frequently until charred and tender. Remove from grill and set aside.

Once cool enough to touch the grilled vegetables-cut the corn off the cob and place into a medium sized mixing bowl. Dice the onion and poblano and add to the corn. Add mayo, Cotija cheese, jalapeno peppers, lime juice and chili powder. Stir to combine. Season with salt and pepper to taste.

Turn oven on broil. Place corn mixture into an oven proof baking dish, top with a sprinkle of Cotija cheese and light sprinkle of chili powder. Broil about 5 minutes, keeping a close eye on the dish. Serve
immediately with chips.

You know what they say, “If you can’t stand the heat, get out off the kitchen”! Nothing could be truer on a sweltering summer day.  But you still have to eat!  What to do?

Not to worry, we have you covered. Anyone can prepare delicious dishes using Jeff’s Naturals all-natural line of olives, peppers, capers and sun-dried tomatoes. Our recipe catalog is chock full of ideas you can use to prepare meals that are not only delicious and refreshing, they come together effortlessly without the heat!

Here are some “no cook” recipes to dash up delicious meals without having to turn on the stove!

Ingredients

Preparation

In a mixing bowl combine the tomatoes, spinach, cucumber, feta, olives, peperoncinis, sweet bell pepper strips and capers.

In a separate bowl whisk together the olive oil, oregano, lemon juice, and crushed garlic.

Once ready to serve, toss the dressing with the vegetables. Cut the pita rounds in half and divide the mixture evenly among the 8 pita rounds.

Serve.

Delicious! Watermelon, Olive, Jalapeño and Feta Salad

Prep Time: 20 min. | Total Time: 20 min. | Serves: 4

Ingredients

Directions:

In a large mixing bowl add all ingredients and gently mix.  Season with salt and pepper to taste.

Chill for 5 to 10 minutes before serving.

Served chilled.

Chef’s note: A refreshing salad, perfect side dish for any meal. Great with grilled dishes and sandwiches.

Refreshing! Cold Peperoncini and Cucumber Yogurt Soup

Recipe: Cold Peperoncini and Cucumber Yogurt Soup

Prep Time: 10 min | Total Time: 10 min | Serves: 4

Ingredients

Directions:

Strain yogurt through cheesecloth to remove excess water and milk.

Add all ingredients into a blender and blend until smooth. Chill and serve cold.

Chef’s Note: Serve as shooters for a small appetizer, as a summer soup, or as a sauce for a light and healthy fish dish.

Ingredients

Olive Salad:

Bread:

  • Hollow out 1 loaf round Italian bread

Cheese, Meats, Garnishes:

  • 6 oz. provolone cheese, sliced
  • 2 oz. capicollo, thinly sliced
  • 2 oz. Genoa salami, thinly sliced
  • 2 oz. ham, thinly sliced
  • 1 tomato, sliced
  • Romaine lettuce

*Calculated ingredients may not always be as accurate as the original recipe.

Directions

Finely chop the vegetables and olives for the olive salad. Combine all salad ingredients; set aside.

Cut the loaf of bread in half crosswise. Use a small, serrated knife to score the inside of both halves about 1″ from the crust. Hollow the bread halves by pulling out the insides with your hands. Leave shells about 1″ thick. Save the bread chunks for other uses.

Spoon salad into bottom half of loaf. Layer 2 oz. cheese over the salad. Top with one type of meat; repeat.

Finish layering with last of cheese and meat. Top with tomato and lettuce.

Use an electric knife to cut the sandwich into four wedges. If you don’t have one, use a very sharp serrated knife. Just saw carefully and don’t press too hard–or you might squish the entire filling out.

Muffulettas can be served hot or cold.

Three Recipes for a Delicious Easter Dinner

Easter’s the perfect time of the year to spend a moment together with loved ones and converse over a delicious, well-cooked meal. When you’re hosting, however, it can be very easy to feel overwhelmed with preparations.

Let us take some of the weight off your shoulders with these easy-to-prepare, healthy, succulent recipes made with Jeff’s Naturals line of all natural Mediterranean products).

Encrusted Salmon with Olive Pesto

Prep Time: 10 min  |  Total Time: 25 min  |  Serves: 4-6

Ingredients

For the Pesto:

  • 3/4 c. Jeff’s Naturals™ Whole Pitted Kalamata Olives
  • 1 c. Italian fresh parsley leaves
  • 1/3 c. basil leaves
  • 2 tsp. crushed garlic
  • 1/2 c. + 1 tsp. extra virgin olive oil (divided)
  • 1 Tbsp. fresh lemon juice
  • 1/3 c. toasted pine nuts
  • Salt and pepper to taste

For the Salmon:

  • 6 salmon 5 oz. each
  • Salt and Pepper to taste
  • Lemon wedges for garnish

Directions:

Place all pesto ingredients in food processor and blend until thoroughly mixed into a textured pesto sauce.

Season 5 oz. salmon with salt and pepper. Drizzle roasting pan with olive oil and place salmon over it.

Spread pesto on the salmon and roast in oven at 375° F for about 10 to 12 minutes.

Squeeze fresh lemon on salmon just before serving.

Chef Notes: Also very good for sea bass, grilled steak, grilled shrimp and grilled chicken. Use as a spread on toasted bread topped with Jeff’s Naturals Roasted Bell Peppers Strips and goat cheese.

Peperoncini Potato Salad

Prep Time:  5min | Total Time: 25min | Serves: 4

Ingredients

Directions:

Place washed potatoes into a pot with cold water, season with salt so it tastes “salty like the sea” and bring water to a boil on high heat. Cook potatoes until they are easily pierced with the tip of a knife, about 15 minutes.

Drain and rinse under cool water. Cut potatoes into bite size pieces and place into a medium sized mixing bowl. Add the peperoncini, capers, zest and parsley. Drizzle on the olive oil and gently toss to combine. Add a tablespoon or two of the peperoncini brine for some added “zing”. Season with salt and pepper to taste and serve.

Spring Spinach Salad with Blue Cheese Stuffed Olives

Recipe: Spring Spinach Salad with Blue Cheese Stuffed Olives

Prep Time: 20 min | Total Time: 30 min | Serves: 4-6

Ingredients

For the Salad:

For the Dressing:

  • 2/3 c. extra virgin olive oil
  • 1 tsp. crushed garlic
  • 1 tsp. Dijon mustard
  • 3 Tbsp. red wine vinegar
  • 1 tsp. lemon juice
  • Salt and pepper to taste

Directions:

Cook bacon, drain and set aside to cool. Chop blue cheese stuffed olives crosswise, into rounds. Slice apple into 1/2-inch by 1/2-inch pieces. Chop bacon. Combine all ingredients with spinach.

Combine all dressing ingredients and whisk until combined, and drizzle over salad. Serve immediately.

What are GMOs?
GMOs are plants or animals that have been genetically engineered with DNA from bacteria, viruses, and other animals and plants for consumption. The Non-GMO Project defines them as

“organisms that have been created through the gene-splicing techniques of biotechnology (also called genetic engineering, or GE). This relatively new science allows DNA from one species to be injected into another species in a laboratory, creating combinations of plant, animal, bacteria, and viral genes that do not occur in nature or through traditional crossbreeding methods”.

Are they safe?
Most developed nations do not consider GMOs to be safe. In more than 60 countries around the world, including Australia, Japan, and all of the countries in the European Union, there are significant restrictions or outright bans on the production and sale of GMOs. In the U.S., the government has approved GMOs based on studies conducted by the same corporations that created them and profit from their sale.

What is the Non-GMO Project?
The Non-GMO Project is a non-profit organization committed to preserving and building sources of non-GMO products, educating consumers, and providing verified non-GMO choices. Buying products that are verified through this program is the best way to support the sustained availability of non-GMO choices in North America.

How common are GMOs?

How difficult is it to be Non-GMO Project Verified?
We undergo a series of rigorous tests and audits to ensure that we adhere to the Non-GMO Project’s strict Standard for GMO avoidance.

What are the impacts of GMOs on the environment?
Over 80% of all GMOs grown worldwide are engineered for herbicide tolerance. As a result, use of toxic herbicides like Roundup has increased 15 times since GMOs were introduced. GMO crops are also responsible for the emergence of “super weeds” and “super bugs:’ which can only be killed with ever more toxic poisons like 2,4-D (a major ingredient in Agent Orange).

How do GMOs affect farmers?
Because GMOs are novel life forms, biotechnology companies have been able to obtain patents with which to restrict their use. As a result, the companies that make GMOs now have the power to sue farmers whose fields are contaminated with GMOs, even when it is the result of inevitable drift from neighboring fields. GMOs therefore pose a serious threat to farmer sovereignty and to the national food security of any country where they are grown, including the United States.

There are countless reasons to take a few minutes in the morning to enjoy a healthy breakfast, but overall health and wellness tops the list. This recent Consumer Reports article states “Breakfast eaters tend to have better diets overall, consuming more fruit, vegetables, milk, and whole grains than non-breakfast eaters.”

INGREDIENTS
Crêpe Batter:
1 c. flour
2 eggs
6 Tbsp. melted butter (plus more for coating pan)
1 ½ c. whole milk

Filling:
½ c. ricotta cheese
¾ c. whipped cream cheese1 lemon, zested and juiced
1 Tbsp. fresh dill, chopped
8 oz. smoked salmon
4 oz. Jeff’s Naturals Imported Non-Pareil Capers
½ sm. Red onion, thinly sliced

Directions:
Add all crepe ingredients into a blender and blend until smooth. In a large non-stick sauté pan on medium-high heat, add just enough butter to coat the pan. Slowly pour in crepe batter while holding pan off the heat and swirling the crepe batter in a circular motion to get a thin layer of batter on the bottom of the sauté pan. Cook for about 1 ½ minutes or until loosened from the bottom of the pan and lightly browned. Flip the crepe and cook another minute until lightly browned. Remove from pan and place on plate and continue process until batter is gone.

In a small mixing bowl, combine the ricotta, cream cheese, lemon juice and zest, and dill. Season with cracked pepper.

To assemble the crepes, spread a small amount of the cheese and dill mixture over one half of the crepe. Add a thin layer of smoked salmon on top of half of the cheese, generously sprinkle with capers, add thinly sliced onion and fold crepe into quarters and serve.

INGREDIENTS
4 slices pancetta
2 eggs, cooked over easy
2 tablespoons Pesto
½ cup Jeff’s Naturals Roasted Red Peppers, drained and patted dry
2/3 cup arugula

PREPARATION
Preheat panini press.
Place pancetta slices in panini press and cook about 3 minutes or until crispy. Remove from press and set aside.
To assemble the paninis, add a tablespoon of pesto on the top inside slice of each sandwich. Add the eggs to the bottom slice of bread. Top the egg with arugula, pancetta, and a layer of roasted red pepper. Top the sandwich with the pesto bread slice and place into the panini press for about 5 minutes or until slightly crispy and golden.

INGREDIENTS
6 eggs
1/4 c. milk
2 c. frozen Potatoes O’Brien hash browns
Oil to coat pan for frying
6 oz. raw breakfast sausage
½ c. Jeff’s Naturals Roasted Red Peppers, chopped
½ c. shredded cheese
1 avocado
Jeff’s Naturals Diced Tamed™ Jalapeño Peppers to top
4-6 tortillas
Optional: Sour cream, salsa and sliced green onion to top

PREPARATION
Crack eggs into a mixing bowl add milk, a pinch of salt and fresh cracked black pepper and whisk.

In a large sauté pan on medium high heat, add just enough oil to coat the bottom of the pan. Add hash browns and fry for about 5 minutes until slightly golden in color. Add breakfast sausage into the pan, break up with a wooden spoon and cook another 7 minutes or until sausage is done. Add egg mixture and chopped roasted red peppers and stir occasionally, lower heat to medium while cooking the eggs for about 6 minutes or until eggs are done. Turn heat off, sprinkle cheese on top to melt.

Assemble the burritos with the egg and hash brown mixture, top with your desired toppings and add the jalapeño peppers for some heat and crunch.

Jalapeño Cucumber Craze

Jalapeno Cocktail

Mix together ½ c. fresh lime juice, 1 thinly sliced lime, 1 c. tequila, ½ thinly sliced cucumber, ¼ c. Jeff’s Naturals Sliced Tamed Jalapeños,  12 fresh mint leaves (optional) & 1 can lemon-lime soda. Chill in refrigerator.

Serve over ice in a salt-rimmed glass. If desired, add a little brine from the Jalapeño peppers jar for a spicy kick.

Jalapeño Lime Margarita

Jalapeño Lime Margarita
Combine 4-6 cups of Ice, 1 (12 oz.) can frozen limeade concentrate, 1 cup tequila and ¼ cup of triple sec into a blender and blend until smooth. Add a splash of Jeff’s Naturals Sliced Tamed Jalapeños brine to taste and blend again. Pour into a glass rimmed with salt and garnish with a lime wedge and jalapeño ring.

Spiked Jalapeño Lemonade

Simple syrup:
In a small saucepan over medium-high heat. combine 1 cup of water with 1 cup sugar in a small saucepan. Bring to a boil. Add ¼ cup  Jeff’s Naturals Sliced Tamed Jalapeños (drained), lower the heat and simmer for 10 minutes. Remove from heat and let cool.

Lemonade:
In a pitcher, mix 1 cup fresh squeezed lemon juice (approximately 5 lemons) with 2 cups of water. Add ¾ cup of the simple syrup and stir well.

Serve over ice with a jalapeno garnish. If using vodka, pour 1 ½ ounce into each glass and top with lemonade.

Watermelon Jalapeño Margarita

Watermelon Jalapeño Margaritas

In a blender, puree 5 cups of seedless watermelon cubes and strain juice through a fine wire mesh sieve. Discard any pulp and seed remnants. In a large pitcher, stir together watermelon juice, 1 cup silver tequila, ½ cup of Cointreau (you could also use triple sec), and ¼-½ cup of fresh lime juice. Add a splash of Sliced Tamed™ Jalapeño brine to taste and stir to combine. Keep cold until ready to use. In a shallow dish, combine 3 tbsp. of kosher salt and 1 tsp. of chili powder.

To prepare the margaritas, rim each glass with the chili powder mixture by wetting the rim of the glass with Cointreau and dipping in the chili and salt. Pour the watermelon margarita over ice and serve with a garnish of watermelon cubes and jalapeño slices.

#1 Margarita Party Plate

Ingredients:
Jalapeño Stuffed Olives
Pepper Jack Cheese
Smoked Cheddar Cheese
Sliced Hot Cherry Peppers
Garlic Stuffed Olives
Spicy Italian Olive Antipasto

Accompaniments:

#2 Watermelon Jalapeño Margaritas

Watermelon Jalapeño Margaritas

Combine the following ingredients in a large bowl and mix thoroughly: 1-1/2 lbs. firm, ripe avocados, peeled, pitted and diced, 1/3 c. Jeff’s Naturals™ Diced Jalapeño Peppers, 1 Tbsp. of salsa, 4 Tbsp. fresh lemon juice, ¼ tsp. ground cumin, ¼ tsp. crushed garlic and Salt and pepper to taste.

Add more salsa to suit spiciness level. Add salt and pepper to taste. Serve with tortilla chips as an appetizer, or top off your favorite Mexican dishes. Serves: 6-8

#4 Black Bean & Roasted Red Pepper Salsa

Black Bean & Roasted Red Pepper Salsa

Drain and 1 1/2 jars of Jeff’s Naturals Roasted Bell Pepper Strips and chop. In a large mixing bowl, toss red peppers with 1 can of  black beans (drained and rinsed), 1/2 cup of minced red onion, 3 Tbsp of fresh lime juice, 1/4 cup of Virgin Olive Oil, 1/4 cup chopped fresh cilantro, 2 Tbsp minced green onions (including tops), 1 Tbsp. Jeff’s Naturals Sliced Tamed Jalapeños, 1 tsp. crushed garlic and 1 tsp. salt. Refrigerate for 25 minutes and serve.

#5 Jalapeño Mangorita

Recipe: Macho Nachos

Preheat oven to 450º F. Spoon 8 oz. light sour cream onto a large, shallow dish, spreading evenly. Top with 1-½ cup of rinsed black beans, ½ jar Jeff’s Naturals Sliced Hot Cherry Peppers (drained) and ½ jar Jeff’s Naturals Diced Tamed Jalapeños (also drained).

Place tortilla chips around edge of plate, lodging them firmly into the dip. Sprinkle entire plate with 1 cup of queso fresco and ½ cup of cheddar cheese. Heat in the oven for five minutes, or until cheese has melted.

Sprinkle with diced roma tomatoes, avocado and scallions on top of beans. Top with a dollop of sour cream to garnish. Serve with remaining bag of tortilla chips. Serves: 8

Combine 4-6 cups of Ice, 1 (12 oz.) can frozen limeade concentrate, 1 cup tequila and ¼ cup of triple sec into a blender and blend until smooth. #8 Spicy Queso Dip

Spicy Queso Dip

In a medium saucepan melt ¼ cup of butter over medium-high heat. Add ¼ cup of flour and cook, stirring constantly, until the roux is pale yellow and frothy, about 1-2 minutes. Do not allow the roux to brown. Slowly whisk in 2 cups of whole milk and continue to whisk until the sauce thickens and comes to a boil, about 2 to 3 minutes. Reduce the heat and simmer for 2 to 3 minutes.

Stir in 4 cups of shredded Mexican blend cheese, one cup at a time, and whisk until melted. Next, stir in the 1 c. Jeff’s Naturals™ Diced Tamed Jalapeño Peppers (drained with brine reserved) and 1 cup of drained and roughly chopped Jeff’s Naturals™ Roasted Bell Pepper Strips. If the sauce seems too thick, thin with some of the jalapeno brine or milk until you achieve the desired consistency. Serve with tortilla chips. Serves: 6-8
