Five Fabulous Mediterranean Inspired Salads

Since May is International Mediterranean Diet Month AND National Salad Month,  we wanted to share some of our favorite salad recipes you can create using our all natural line of olives, peppers and more!

A traditional Mediterranean diet is heart healthy and budget friendly. It consists of large quantities of fresh fruits and vegetables, nuts, fish, whole grains, legumes, olive oil, less red meat and dairy and no processed foods, refined sugars and flour.

These salads are Mediterranean classics with a modern twist. You will find these recipes to be simple yet versatile enough to be used as a side dish and hearty enough to be the main course. Hope you enjoy!

Greek Grilled Shrimp Salad

1 pound raw shrimp (26-30 count), cleaned and deveined
1/4 c. & 1/2c. Extra Virgin Olive Oil
1/2 tsp. salt and pepper
2 medium tomatoes, quartered
1/3 c. Jeff’s Naturals Feta Cheese Stuffed Olives, sliced
1/2 c. Jeff’s Naturals Organic Pitted Whole Greek Kalamata Olives
1 tsp. dried oregano
1/3 c. aged balsamic vinegar
1/4 tsp. salt
1/4 tsp. Crushed Garlic
1 Tbsp. brown sugar
Fresh ground pepper
1 (10 oz.) bagged baby spinach leaves, washed

PREPARATION

Thread shrimp onto metal skewers (or wooden skewers soaked in boiling water for 15 minutes). Brush both sides of the shrimp with 1/4 cup olive oil and sprinkle with the 1/2 tsp. salt and pepper. Heat gas grill, with all burners on high, until fully preheated, 10 to 15 minutes. Brush rack lightly with oil. Grill shrimp until cooked through, about 2 minutes per side.

Meanwhile, in a medium bowl mix the crushed garlic, sugar, salt, oregano and balsamic vinegar. Slowly whisk in the 1/2 cup of olive oil.

In a large serving bowl, combine the spinach, tomatoes, cheese, olives, and shrimp. Lightly toss the salad with the dressing. Top with fresh ground pepper and serve.

Recipe: Indian Summer Palette Salad

Salad:

8 c. mixed greens (baby greens, fancy blend)
1/2 c. medium red onion, sliced
1/4 c. basil, finely chopped
1 jar Jeff’s Naturals™ Whole Pitted Kalamata Olives, drained
1 jar Jeff’s Naturals™ Garlic Stuffed Olives, drained
6 Roma tomatoes, quartered
1 c. shaved Parmesan cheese

Dressing:
4 Tbsp. balsamic vinegar
2 Tbsp. white wine
2 Tbsp. extra virgin olive oil
1 Tbsp. Jeff’s Naturals™ Sun-Ripened Dried Tomatoes, diced fine
1 Tbsp. crushed garlic
1 Tbsp. Jeff’s Naturals™ Non-Pareil Capers
Salt and pepper to taste

PREPARATION

Combine dressing ingredients in a small bowl and whisk briskly to combine and blend. Set aside. Place greens, red onion and basil in large shallow bowl (like a pasta bowl). Gently toss to mix.

Scatter olives over the greens. Arrange tomatoes on the outer perimeter of the bowl. Scatter cheese over the center of the salad. Re-whisk the vinaigrette and drizzle over the salad and serve immediately.

Mediterranean Bean Salad

Mediterranean Bean Salad

1 can (15 oz.) small white beans, rinsed and drained
1 can (15 oz.) cannellini beans, rinsed and drained
1 jar Artichoke Hearts, coarsely chopped (not drained)
1 c. Jeff’s Naturals™ Roasted Red Bell Peppers, coarsely chopped (not drained)
3/4 c. Jeff’s Naturals Organic Pitted Whole Greek Kalamata Olives 
1/2 c. red onion, finely chopped
1/4 c.Jeff’s Naturals™ Sun-Ripened Dried Tomatoes (not drained)
2 tbsp. white balsamic vinegar
1/2 c. fresh basil, sliced thing
salt and pepper to taste

PREPARATION

Stir together all ingredients except basil. Cover and let marinate, refrigerated, for a least 1 hour. Stir in basil just before serving.

Recipe: Watermelon, Olive, Jalapeño and Feta Salad

1 Tbsp. Jeff’s Naturals™ Pitted Kalamata Olives, drained and diced
1 Tbsp. Jeff’s Naturals™ Sliced Tamed Jalapeño Peppers, drained and diced
2 c. seedless watermelon, rind removed, cut into 1”cubes
1/2 c. feta cheese, crumbled
1/4 c. red onion, finely diced
1 Tbsp. mint leaves, finely chopped
1 Tbsp. green onion, finely chopped
1 Tbsp. extra virgin olive oil
Salt and pepper to taste

PREPARATION

In a large mixing bowl add all ingredients and gently mix. Season with salt and pepper to taste. Chill for 5 to 10 minutes before serving. Served chilled.

Chef’s note: A refreshing salad, perfect side dish for any meal. Great with grilled dishes and sandwiches.

Greek Salad

Greek Salad

1 c. Extra Virgin Olive Oil
1/2 c. white wine vinegar
2 Tbsp. dried oregano
2 c. feta cheese, diced
1 jar Jeff’s Naturals Roasted Bell Pepper Strips, drained
1 jar Jeff’s Naturals Sliced Golden Greek Peperoncini 
3 green bell peppers, seeds and membranes removed, sliced
3 large cucumbers, preferably seedless, peeled and sliced
1 jarJeff’s Naturals Organic Sliced Greek Kalamata Olives, roughly chopped
2 large red onions, peeled and thinly sliced
1-1/2 pints cherry tomatoes, halved
Freshly ground black pepper to taste

PREPARATION

Combine all of the ingredients together in a stainless or non-reactive bowl, and toss together. Allow to marinate 15 minutes. Toss again before serving. Serve on nicely arranged lettuce leaves.

Highlights from Natural Products Expo West

The Jeff’s Naturals team were all smiles at Natural Products Expo West last weekend!

A record breaking crowd of 67,000 people, including our team,  gathered in Anaheim CA last weekend to hear, see and taste the very latest and greatest in the natural products industry at the Natural Products Expo West, the world’s largest natural products trade-show!

It was fun to see old friends and meet lots of new faces as we introduced our line of all natural pantry staples.  We joined almost 3,000 other exhibitors for three days of presentations, meetings and samplings.

It was quite noticeable this year that the non-GMO movement is really taking hold and influencing the food choices consumers make, and we are proud to be among the exhibitors that are non-GMO certified.  Jeff’s Naturals had an extremely successful showing at the expo, in fact, people flocked to our booth just to sample our products!  Nice to see so many olive and pepper lovers out there!

One of our highlights of course was our very popular Bloody Mary Bar we co-hosted with Lakewood Juice with generous support from  Tillen Farms on Saturday.

Guests who stopped by our booth were treated to a yummy Bloody Mary made with Lakewood Organic Super Veggie Juice and garnished  Tillen Farms Gourmet Green BeansAsparagus and an assortment of our stuffed olives including Blue Cheese Stuffed OlivesFeta Cheese Stuffed OlivesGarlic Stuffed Olives or Jalapeño Stuffed Olives.

Needless to say, our cocktail party was a big hit.  A big thanks goes out to Lakewood Juice and Tillen Farms  for working with us!  What fun we had!

We are packing our bags and headed to Anaheim CA for Natural Products Expo West March 7-9, 2014! The event is the world’s largest tradeshow for the natural products industry and will bring together 60,000+ members of the natural products community inside the Anaheim Convention Center!

This year, we are taking things up a notch and will be joining Lakewood Juice to host a yummy Bloody Mary Bar on Saturday, March 8th from noon to 2PM at Booth #2997 in Hall C !

Bloody Marys are great, but they are even better with Jeff’s Naturals olives as garnishes, so we will be featuring our hugely popular Blue Cheese Stuffed Olives, Feta Cheese Stuffed Olives, Garlic Stuffed Olives and our Jalapeño Stuffed Olives.  Combine these with Lakewood Organic Super Veggie Juice, Tillen Farms Gourmet Green Beans and Asparagus as cocktail stirrers, and a handful of other ingredients (see recipe below) and you have yourself a tasty cocktail!!

Jeff’s Dinner Inspiration: How to Host a “Make Your Own Pizza” Party

Make your own pizza party

It’s not always easy to come up with a dinner plan that accommodates a group of family or friends, especially if some of them have certain food allergies and/or restrictions. This why a “Make Your Own Pizza” party is an ideal solution! You can accommodate a large group or a small gathering. Got a food allergy? No problem. Your guest can choose what to put on their pizza. Lactose intolerant? Leave off the cheese and load up on the other goodies! Wheat intolerance? There are numerous gluten free pizza dough options out there! Your guests can customize their pizza any way they choose.

Not only are homemade pizzas delicious, making pizza allows your guests to get creative and is great conversation starter! In this post, we will guide you step by step on how to create a fun and delicious no-fuss dinner that will fit every just about any budget and taste.

Step 1: Start with pre-made dough.
If you do not have time to make your own dough (and many of us don’t) purchase some pre-made dough. Contact your local pizza parlor and ask if you can purchase pre-made dough (tell them the number of guests you are hosting so they can estimate how much). If this is not an option, many grocery stores will carry pre-made dough. Figure this out in advance so you are not scrambling the day of your party.  

Step Two: Prep your dough in advance of your party.

  • Make more than you need: Have at least 1 1/2 times the number of dough balls or shells as you have expected guests. Everybody loves leftovers, and you’re inevitably going to have a botched pie or two that will need to be reworked.
  • Make your dough at least a day in advance. Dough that’s had a three to five day rest in the refrigerator will be tastier and easier to work with than freshly made dough. It also makes set up for you planning simple.
  • Cold dough is impossible to work with. Pull your dough out, portion it into individual size balls, then let them sit on a lightly floured cutting board covered with plastic wrap and a towel for at least a couple hours before your guests arrive so it’ll be in prime condition to stretch.

Step Three: Offer a simple tomato pizza sauce
Start with a basic  homemade pizza sauce If you are feeling adventurous, add in a couple of fun alternative sauces like BBQ Pizza Sauce, Bechamel (white sauce) or Pesto

Step Four: Set out a variety of toppings for your guests to choose from.
Prep these in advance. Start with the basics (cheese, pepperoni) and kick things up with some unexpected ingredients (see below). Let your imagination go wild!

Step Five: Let your guests assemble their pizzas.
Depending on the number of guests you have, you can stagger the number of people assembling the pizzas to accommodate your space and your oven.
Bake 2-3 pizzas at a time for 10-12 minutes at 425 degrees. Enjoy and Repeat as necessary!

9 Simple Ways to Start a Mediterranean Diet and Lifestyle

The Mediterranean lifestyle is not a fad nor does it have a catchy title. It is simply a common sense approach to eating and living that has been shown to improve well-being and quality of life. The best part is, the Mediterranean diet does not ban any major food groups and is not difficult or expensive to follow.

Health organizations like Oldways are a great place to begin. The organization provides resources to help consumers understand what the Mediterranean Diet is, why it is good for you, and how to shop for and cook healthy Mediterranean meals. Here are some additional suggestions on how to get to started. You may find these simple steps to be easier and more manageable than you thought.

1. Print out a copy of the Mediterranean diet pyramid and post in your kitchen.

It helps to visually to compare and contrast the Mediterranean diet pyramid to the USDA Food Pyramid we are all used to.  In a nutshell the Mediterranean diet pyramid emphasizes fruits, veggies, whole grains, beans, nuts, legumes, olive oil, and flavorful herbs and spices; eating fish and seafood at least a couple of times a week; enjoying poultry, eggs, cheese, and yogurt in moderation.

Compared to the USDA, the Mediterranean Pyramid contains much smaller amounts of red meat, sweets (fruits are eaten as sweets) and dairy but allows for more in-take of healthy fats and oils.

Another difference is that the Mediterranean Food pyramid is structured to demonstrate what is recommended on a monthy, weekly and daily basis while the USDA just describes the daily intake.

2. Eat breakfast every day no matter how busy you are.

You have heard it before but breakfast is the most important meal of the day. The reasons to eat breakfast every day are seemingly endless. Studies have linked a healthy breakfast with lower rates of obesity, more energy throughout the day, and better productivity. A breakfast packed with fruits, whole grains, and other fiber-rich foods are a great way to start your day, just do it.

3. Understand the difference between healthy fats and unhealthy fats.

Monounsaturated fats found in ingredients such as extra-virgin olive oil, nuts, sunflower seeds, olives, and avocados and polyunsaturated fats found in sunflower, safflower, soybean, and corn oil are known as the “good fats” because they are good for your heart, your cholesterol, and your overall health.

Overconsumption of saturated fats and trans fats can increase your risk of disease and elevate cholesterol, so consume these in moderation. Click here to learn more about the differences in fats.

Join the millions who have adopted “Meatless Mondays” into our weekly meal planning or simply pick a day where you build meals around beans, whole grains, and vegetables. Once you are comfortable with making vegetarian meals, try two nights a week. Don’t substitute cheese for meat- this defeats the purpose!

5. Pack in as many vegetables as possible into your meals.

Load up sandwiches, omelets, soups, pizza, etc with fresh herbs and vegetables. Look for recipes packed with vegetables like this Italian Farro Minestrone soup made with our Roasted Red Peppers and Caramelized Onions, or Indian Summer Palette Salad with mixed greens, red onion, basil, Kalamata Olives, Garlic Stuffed Olives, and Roma tomatoes.

6. Reduce your meat intake. 

Numerous reports have shown that Americans eat more meat than any other nation. In fact, Physicians for Social Responsibility (PSR)  says the average every America consumes nearly 200 pounds of meat each year.

We are not saying NO MEAT, but reducing the amount of saturated fats and trans fats found in meat products could have a positive impact on your health.  The Mediterranean diet allows you to have meat, but it encourages smaller amounts and leaner cuts. Save the red meat for special occasions.

7. Eat seafood twice a week.

Fish such as tuna, salmon, herring, and sardines are rich in Omega-3 fatty acids, and shellfish like mussels, oysters, and clams have similar benefits for brain and heart health. Try new fish recipes like this one for Encrusted Salmon with Olive Pesto using our Kalamata Olives.

8. Make it a goal to sit down at the family table for dinner on a consistent basis.

In most cultures, meal time is a pleasurable experience with good foods and drinks, well prepared and consumed with pleasure, in the company of family and friends.

For many of us, the demands of our schedule make it difficult if not impossible to enjoy regular family meals together.…however it is important for our health and the health of your children. In recent years, researchers have linked regular family dinners with lower the rates of obesity and eating disorders in children and adolescents, lower rates of substance abuse, teen pregnancy and depression, as well as higher grade-point averages and self-esteem.   Visit thefamilydinnerproject.org for tips on how to bring your family  back to the table for dinner.

9.  GET MOVING.

Go for a walk even if it just around the block.  Play with your kids, go dancing, do yoga, go for a run, do a zumba class, go hiking, ride a bicycle, lift weights…whatever your exercise preference is..DO IT!  Commit yourself to getting at least 20-30 minutes a day!  Get off the couch or the computer and move!

Five Fabulous Super Bowl Recipes Your Party Guests Will Love!

Football fan or not, if you are like most Americans, chances are you will be watching the Super Bowl on Sunday, February 2nd.

Super Bowl Sunday is a great excuse to gather friends and enjoy some great food!  Here are some recipes for crowd pleasing snacks and easy bites for your big bash using Jeff’s Naturals non-GMO products:

Super Bowl Recipes
From top right, Denver Bronco Macho Nachos, Seattle Seahawks Supreme Artichoke Dip, Gridiron Garlic Pepper Toast, Half Time Deep Dish Party Pizzas

Denver Bronco Macho Nachos

8 oz. light sour cream
1 1/2 c. black beans, rinsed
1/2 jar Jeff’s Naturals Sliced Hot Cherry Peppers, drained
1/2 jar Jeff’s Naturals Sliced Tamed Jalapeños, drained
4 roma tomatoes, diced
1 diced avocado
4 scallions, thinly diced
1 bag tortilla chips
1 c. queso fresco
1/2 c. cheddar cheese

Preheat oven to 450 degrees. Spoon sour cream onto a large, shallow dish, spreading evenly. Top with black beans, Hot Cherry Peppers and Jalapeños.

Place chips around edge of plate, lodging them firmly into the dip. Sprinkle entire plate with queso fresco and cheddar. Heat in the oven for five minutes, or until cheese has melted.

Sprinkle tomatoes, avocado and scallions on top of beans. Top with a dollop of sour cream to garnish. Serve with remaining tortilla chips.

Seattle Seahawks Supreme Artichoke Dip

1 cup mozzarella, shredded
½ cup parmesan, shredded
8 ounces cream cheese, softened
¼ cup mayonnaise
2 jars marinated artichoke hearts, drained and rough chopped
1 teaspoon minced garlic
½ tablespoon Jeff’s Naturals Tamed Diced Jalapeño Peppers
¼ cup Jeff’s Naturals Roasted Bell Pepper Strips, drained and diced
Salt and Pepper to taste

Preheat oven to 400º F. In a large mixing bowl, combine all the ingredients.
Place into an 8×8 baking dish and bake for about 15 minutes or until bubbly around the edges. Serve hot with pita chips or bread cubes.

No Super Bowl party would be complete without classic chips & dip! Set out this Jalapeño Guacamole made with our famous Tamed Sliced Jalapeño Peppers with your favorite tortilla chips and watch it disappear!

1 1/2 lbs. firm, ripe avocados, peeled, pitted and diced
1/3 c. Jeff’s Naturals Tamed Sliced Jalapeño Peppers, chopped roughly
1 Tbsp. of salsa
4 Tbsp. fresh lemon juice
¼ tsp. cumin, ground
¼ tsp. crushed garlic
Salt and pepper to taste

Combine all ingredients in a large bowl and mix thoroughly. Add more salsa to suit spiciness level. Add salt and pepper to taste. Serve with tortilla chips.

Gridiron Garlic Pepper Toast

1 c. sliced onion
1 jar of Jeff’s Naturals Roasted Bell Pepper Strips, drained
3 minced Garlic
5 Tbsp. olive oil, divided
2 tsp. fresh basil, julienned
1/2 tsp. garlic salt
1 loaf (1 pound) French bread
1 c. (4 oz.) shredded mozzarella cheese

In a skillet, sauté onion, Roasted Bell Pepper Strips, garlic and olive oil. Add basil and garlic salt set aside. Cut bread into 1-in. slices and place on an ungreased baking sheet. Broil each side for 1-2 minutes or until lightly browned. Brush remaining oil on one side of bread. Top with pepper mixture and cheese. Broil for 2-3 minutes or until cheese is bubbly and your toasty appetizer is ready!

Half Time Deep Dish Party Pizzas

1 store bought pizza dough
¼ c. Extra Virgin Olive Oil
1/2 cup Jeff’s Naturals Roasted Bell Pepper Strips, drained
1/2 cup of Jeff’s Naturals Sliced Greek Kalamata Olives, drained
½ sm. onion, thinly sliced
½ c. sliced mushrooms
1 tsp. minced garlic
1 c. shredded mozzarella
1 c. Pizza Sauce

Preheat oven to 425 degrees. Prep a muffin tin by lightly oiling the inside of every other cup. Divide pizza dough into 6 pieces. Lightly dust kitchen counter with flour and roll out each piece of dough to about 6 inch rounds. Line every other muffin cup with the dough and press into the molds around the sides and bottom.

Drizzle olive oil to coat a sauté pan on medium high heat. When hot, onion, mushrooms, and garlic; sauté about 7 minutes or until vegetables are tender. Drain vegetables of any excess liquid.

To prevent mini deep dish pizzas from being soggy on the bottom, first sprinkle mozzarella cheese, then add Roasted Bell Pepper Strips, Kalamata Olives and sautéed vegetables. Next, spoon some pizza sauce inside the cup and top with a few more pieces or shredded mozzarella, if you choose.

Use a pastry brush and lightly oil the edges of the pizza crust. Place into the oven and cook about 15 minutes or until crust is golden brown. Remove from cups when cool enough to handle.
